All day counts
The All day tab turns the board into one question: how many of each dish do I still have to make? It is the same tickets as Active, counted per dish instead of shown per ticket, for the stations this screen is set to.

Reading the table
One row per dish, sorted by the most work outstanding, with a Total row at the bottom.

Served, cancelled and voided plates are not counted. A dish with quantity 3 on one ticket counts as 3.
The table is read-only; there is nothing to tap. Switch back to Active to move a dish. While the board loads it reads Counting…; an empty table reads Nothing left to cook.
Include held courses
Off by default, so the table shows only what the kitchen can start right now. Turn it on to see what is behind the held courses too — useful at the start of a rush, to pull mise for the mains while the starters go out.
It is the same feed
All day is not a separate report: it counts the tickets the Active tab shows for this screen's stations, so it updates live as cooks tap and as new tickets arrive. A dish that is not on this screen's station is not counted; set the picker to All Stations for a whole-kitchen count.
